Put onion, garlic, zucchini, black beans, and rice in food processor and pulse to combine.
Add in pumpkin seeds ½ cup at a time and pulse to combine. Be sure to leave some texture.
Arrange patties on a baking sheet sprayed with olive oil and bake for 8 minutes each side.
Spread butter or olive oil on inside of top and bottom of bun and toast lightly.
Place patty on warmed bun, top with your favorite toppings, and enjoy!
