Method
- Put onion, garlic, zucchini, black beans, and rice in food processor and pulse to combine.
- Add in pumpkin seeds ½ cup at a time and pulse to combine. Be sure to leave some texture.
- Arrange patties on a baking sheet sprayed with olive oil and bake for 8 minutes each side.
- Spread butter or olive oil on inside of top and bottom of bun and toast lightly.
- Place patty on warmed bun, top with your favorite toppings, and enjoy!
