Kale Supreme Salad

Ingredients
  

  • 2 cups green or purple kale rinsed
  • ½ cup quinoa
  • ¼ cup chickpeas soaked and cooked or canned
  • ¼ cup artichoke hearts canned in water
  • ¼ cup roasted bell peppers
  • ¼ cup pumpkin seeds
  • ¼ cup kalamata olives
  • 2 Tbsp balsamic vinaigrette

Instructions
 

  • Combine all ingredients in a bowl.
  • Mix well and serve.
