Gnocchi with Jackfruit and Kale

Ingredients
  

  • 5.5 oz gnocchi
  • 1 Tbsp olive oil
  • 1 cup kale chopped
  • 1 tsp fresh garlic minced
  • 5 oz jackfruit
  • 1 tsp red chile flakes
  • salt and pepper to taste

Instructions
 

  • Cook gnocchi according to package directions. Typically this means boiling some water and waiting until the gnocchi float to the top. Take them out after a few seconds at the top so they don’t over cook and get mushy.
  • Add the kale and sweat a few minutes until it softens.
  • Add the garlic and cook a few minutes more.
  • Add the rest of the ingredients and cook for 3-5 minutes until jackfruit is warmed and all the flavors combine.
