Ful Medames

Ingredients
  

  • 1 15 oz can pinto beans, drained and rinsed
  • ½ onion diced
  • 2 – 3 cloves garlic diced
  • 1 Tbsp olive oil
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp turmeric
  • salt and black pepper to taste
  • juice of ¼ lemon
  • 1 to mato diced
  • 1 Tbsp parsley chopped

Instructions
 

  • Chop onions and garlic and let them rest for 5-10 minutes.
  • Open can of beans, drain and rinse.
  • Sauté onion in warm pan with olive oil until translucent. Add garlic and sauté three minutes more.
  • Add spices and lemon juice and mash a little with potato masher.
  • Add diced tomatoes and parsley and give the beans a stir.
  • Serve warm.
