Cucumber, Endive, and Heirloom Tomato Salad

Ingredients
3
heads endive
sliced
1
orange or yellow heirloom tomato
sliced
1
medium cucumber
cut in half length-wise and sliced
For the Dressing:
½
lemon
juiced
1
tsp
lemon zest
2
Tbsp
olive oil
salt and pepper to taste
Instructions
Assemble all vegetables in a medium sized bowl.
Whisk the ingredients for the dressing in a separate bowl.
Pour dressing over vegetables and serve.
