Cucumber, Endive, and Heirloom Tomato Salad

Ingredients
  

  • 3 heads endive sliced
  • 1 orange or yellow heirloom tomato sliced
  • 1 medium cucumber cut in half length-wise and sliced

For the Dressing:

  • ½ lemon juiced
  • 1 tsp lemon zest
  • 2 Tbsp olive oil
  • salt and pepper to taste

Instructions
 

  • Assemble all vegetables in a medium sized bowl.
  • Whisk the ingredients for the dressing in a separate bowl.
  • Pour dressing over vegetables and serve.
