Endive Salad

Ingredients
  

  • 4 Brussels Sprouts sliced
  • 1 head Belgian endive
  • ¼ cup cilantro chopped
  • ¼ cup parsley chopped
  • ½ avocado diced
  • 2 scallions diced
  • ½ lemon juiced
  • ¼ cup olive oil
  • 1 tsp kelp granules
  • salt and pepper to taste
  • ¼ cup pumpkin seeds optional

Method
 

  1. Combine all ingredients from Brussels Sprouts through scallions in a bowl.
  2. Whisk lemon juice, olive oil, kelp granules, salt, and pepper and pour over salad.
  3. Top with pumpkin seeds if desired.
