Gnocchi with Jackfruit and Kale

Ingredients
  

  • 5.5 oz gnocchi
  • 1 Tbsp olive oil
  • 1 cup kale chopped
  • 1 tsp fresh garlic minced
  • 5 oz jackfruit
  • 1 tsp red chile flakes
  • salt and pepper to taste

Method
 

  1. Cook gnocchi according to package directions. Typically this means boiling some water and waiting until the gnocchi float to the top. Take them out after a few seconds at the top so they don’t over cook and get mushy.
  2. Add the kale and sweat a few minutes until it softens.
  3. Add the garlic and cook a few minutes more.
  4. Add the rest of the ingredients and cook for 3-5 minutes until jackfruit is warmed and all the flavors combine.
