Cucumber, Hearts of Palm, and Broccoli Salad

Ingredients
  

  • 2-3 leaves Kale depending on how big they are and how much salad you want to make.
  • 3 inch segment of cucumber
  • 1/2 avocado
  • 1 cup steamed or raw broccoli
  • 2 segments Hearts of Palm
  • 1/2 cup Canellini beans or other white bean
  • 2 cloves garlic minced
  • 1/2 lemon juiced
  • 1 1/2 tsp olive oil extra virgin
  • salt and pepper to taste

Instructions
 

  • Cut kale leaves into pieces.
  • Cut cucumber into bite-sized pieces.
  • Cut avocado in half and score into dice.
  • Cut broccoli into pieces.
  • Slice Hearts of Palm into discs.
  • Place all ingredients into salad bowl.
  • Mince garlic and add to bowl.
  • Squeeze half a lemon onto salad.
  • Drizzle with olive oil.
  • Sprinkle with salt and pepper.
  • Mix and enjoy.
