Fruit Smoothie Anytime Bowl

Ahhhh, breakfast.

Probably the most difficult of meal of the day for me. Not because it’s difficult to make, but because as a vegan sometimes it’s difficult to figure out what to make. When the usual options of eggs are taken off the menu, you have to get creative.

Even I feel stumped sometimes.

I mean, I’ve done Avocado Toast, and oatmeal (if you eat grains), eggless omelets, and there’s only so many ways to eat fruit, right? Well, I think I’ve done it all – smoothies, shakes, fruit salad, fresh cut fruit, whole fruit, etc….. And, after all the different ways I’ve eaten fruit, this seems to be the most fun!

And you don’t need fancy equipment to make it either!

I started out by making my standard smoothie recipe and then added fresh cut fruit on top. It turned into a beautiful fruit smoothie bowl full of vitamins and probably took care of several servings of fruit for the day. And, because these are all low glycemic fruits I don’t have to worry about raising my blood sugar (or my insulin levels).

This smoothie bowl is a win-win no matter what time of day you eat it!

You can eat this smoothie bowl for breakfast, or mid-morning or mid-afternoon snack and it will always taste amazing! On a hot summer day, it will do just the trick to cool you down. It can also be a sweet treat reward for something you want to celebrate. And the best part? It’s low in calories (but high in nutrients), so you don’t have to worry about setting yourself back if you’re watching your intake.

Ok, here’s the recipe!

Fruit Smoothie Bowl

Ingredients
  

For the standard smoothie:

  • 1 small banana
  • ½ cup raspberries rinsed and drained
  • ½ cup blueberries rinsed and drained
  • 4-5 strawberries rinsed and drained, cut into halves
  • 1 cup non-dairy milk (I like to use this one)
  • 2 Tbsp Chia seeds

For garnish:

  • 1 strawberry sliced on the diagonal
  • 5-6 pitted dark cherries
  • 1 apricot sliced
  • 1 sprig of mint or basil

optional ingredients:

  • 1 kiwi sliced
  • ½ small peach sliced
  • ¼ mango slices or dice any other fruit you like
  • ¼ cup granola sprinkled on top
  • 1 Tbsp toasted coconut flakes
  • 1 Tbsp pumpkin seeds
  • 1 Tbsp Hemp seeds

Instructions
 

  • Rinse and drain all berries. Combine with banana and milk of choice in blender.
  • Blend until smooth.
  • Add ½ cup ice cubes if desired.
  • Pour into bowl.
  • Add sliced fruit, granola, or any other ingredients you like on top.
  • Serve and enjoy immediately!
