Zoodles with Spaghetti Sauce

Zoodles, or zucchini noodles, with marinara or tomato sauce is one of the easiest dishes you’ll ever make! I made mine with store-bought spaghetti sauce, but I’m sure they would taste great with homemade sauce too.

I made the zoodles for a segment I did on a local news channel talking about local foods in season. Some of the other recipes I showcased that day were Stuffed Peppers and Collard Greens with Garlic and Lemon.

Zucchini are one of those fall foods that comes in abundance. So much so, that your friends and neighbors that grow will be begging you or paying you to take some off their hands.

A Fresh Twist on a Long-time Favorite

I love pasta, but it doesn’t love me. That’s why I’m gluten free. Although I have found some really good gluten free pasta, zoodles are easy to make, unprocessed, and 100% gluten free.

The only kitchen tool you need to make zoodles is a spiralizer. You can use a handheld or one that sits on the counter. Both are easy to use. I personally have the kind that sits on the counter, I use it all summer, and I love it!

Five Minute Dinner

One of the things I love about this meal is that there are two ingredients and it takes less than five minutes to make.

I make my zoodles while I am heating my sauce and when I’m done spiralizing my zucchini I throw the spirals in the saucepan to warm up with the sauce. It’s that easy!

You could also add things to this recipe like fresh minced garlic, diced onion, or diced carrots or mushrooms added to the sauce. You could add cooked lentils to the sauce, or even tofu crumbles if you enjoy eating tofu. If you  add extra ingredients, especially vegetables, let them cook in the sauce before adding your zucchini noodles, since they cook the fastest and would become mushy. Carrots are the hardest vegetable and would need the longest to cook and become soft.

Also, you don’t have to use zucchini as your noodle of choice. You could spiralize carrots, butternut squash, potato, or beets. Some of these vegetables would be easier to spiralize with a counter spiralizer more so than the handheld. Whichever you decide to experiment with, enjoy!

 

Zoodles with Spaghetti Sauce

Ingredients
  

  • 1-2 medium zucchini
  • Spaghetti sauce

Instructions
 

  • Spiralize zucchini to make noodles.
  • Warm up spaghetti sauce. When hot, add zucchini noodles and cook 2-3 minutes to warm.
  • Serve al dente.
